General Purpose of the Job:
As a prep cook, you are responsible for preparing and portioning as well as perform a variety of food preparation duties other than cooking, such as preparing cold foods and, slicing meat. But that’s just the technical stuff. We also want you to have a love of food and passion for creating the best guest experience.
Essential Duties and Responsibilities:
- Measures ingredients and prepares them in accordance to chef’s specifications;
- Washes and peels ingredients in order for them to be used in different meals;
- Cuts and portions different types of meat according to specifications.
- Prepares different types of food from the menu, following carefully the recipes;
- Makes stock soups to be used during cooking process;
- Accepts or rejects ingredients from food suppliers, based on their appearance and quality;
- Keeps track of ingredient quantities and ensures there are always enough for the day/week;
- Stores ingredients in dedicated containers, making sure that they are best preserved;
- Informs superiors when the ingredients stock is getting low or when the kitchen tools do not work properly;
- Must demonstrate impeccable sanitation habits including on their person as well as their station. Must clean and sanitize the working surfaces, tools, utensils and working area;
- Carefully supervises the food temperature and the temperature from cooling rooms, to ensure that the ingredients kept are kept at the appropriate temperature;
- Follow cleaning calendar – clean work station before and after food prep to ensure always working in a clean area.
- Follow safety procedures for using all kitchen equipment. Demonstrates efficient knife skills.
- Carry out other duties assigned by the manager on duty or the Executive Chef.
- Do not hesitate to ask for management intervention if necessary.
- Other duties as directed.
Requirements:
- Knowledge of FIFO inventory method.
- Special Skills or knowledge necessary for this position.
- Basic mathematical skills, handle money and give correct change.
- Basic reading skills.
- Basic computer skills.
- Basic knowledge of beer, wine and spirits, and be familiar with standard drink recipes.
- Excellent communication skills.
- Organizational skills.
- Multi-task oriented.
- Knowledge of food & beverage specifications.
- Knowledge of workplace safety procedures.
- Licenses certification, or registrations required for the position.
- State applicable health and/or alcohol compliance card.
Physical Demands:
- Must be impeccable in appearance and in the proper uniform every day without exception.
- Walks and stands during entire shift.
- Continuously reach, bend, lift, carry, stoop and wipe.
- Remain stationary for long periods of time.
- Frequent washing of hands.
- Be Able to lift up to 35 lbs.
- Hazards may include, but are not limited to, slipping and tripping.
- Ability to climb up and down stairs repeatedly during the shift
